Saballuts are a creation by Rosa Maria Gotés, a master craftswoman from Forn Gotés – Tot Teca in Sabadell. With these bread rolls, Gotés wants to honour the city of Sabadell and the “colla castellera” bearing the same name.
Saballuts are elaborated with high-quality wheat flour, olive oil, sourdough and two ingredients that are specially typical from Sabadell: caramelized or dehydrated onion (which reminds of the onion appeared on Sabadell city’s badge) and gram flour (which refers to the “cigronet menut” of Parc Agrari de Sabadell).
